These meatballs come together super quick with just a few ingredients which makes it great for a quick meal prep or easy weeknight dinner! We served these over whole wheat pasta and homemade tomato sauce that we prepped and froze over the winter! I hope you enjoy these as much as we do.
Ingredients
1/2 cup seasoned breadcrumbs
1/2 cup grated Parmesan
1 lb. ground chicken
1 large egg
2 Tbsp olive oil
Instructions
Preheat the oven to 350 degrees
Mix all ingredients together by hand
Roll into about 1-1.5 inch balls (should make about 20 meatballs)
Place meatballs on a baking sheet
Bake for 10 minutes, and then flip. Continue baking for about 8-10 minutes, or until cooked through
